I’m looking forward to reliving and reviewing a remarkable chef’s tasting I had at Proof on Main in Louisville, KY, which is every bit as much an art museum as it is a restaurant. Chef Mike Wajda was kind enough to both cook a chef’s tasting meal and describe the dishes on camera for Expat Cook. In the meantime, here’s a video of the two of us doing a fino sherry luge through a spent marrow bone. The sherry picks up all the creamy fat that’s left over and balances it. I was so worried about spilling it everywhere, which I’m sadly prone to doing, but it turned out I didn’t need the bib at all!
